The Perfect Mai Tai

We searched far & wide over the island of Oahu for the best Mai Tais.  Our favourite were found at Pinky's Pu Pus.  We also really liked the Mai Tais at Dave & Buster's. 

Here is the recipe we use for killer Mai Tais (they even got Heather to say "yes" when Chris proposed to her!):

• 1 oz. light rum
• 1 oz. dark rum
• 1 oz. triple sec
• 1 oz. orgeat syrup (depending on taste...can go lighter on this)
• 1 oz, orange curacao
• dash of sugar

Mix it all up with ice & pour it cold.  If you want to be really fancy, leave the dark rum out & then after you mix & put, float the 1 oz. of dark rum on top. Garnish with a cherry and a piece of fresh pineapple - Just like Pinky's!

Chris's Rocky Point Bloody Mary

This is another classic drink.  Great for brunches, after a hang over & just any time.  This was perfected from watching very closely as the Manny's bartendars poured drink after drink for the family.  It's a bit of a variation but still very similar.

Ok, first you've got to start with the salt.  Need to salt the rim of about a 12 - 16 oz. glass.  A good twist is to mix Old Bay spice with the salt.  Take a lime & run it round the rim, salt & get ready to pour. 
    Hint:  add ice last so as not to knock the salt off the rim.

• 1 full lime squeezed (can make do with halves if you're short on them)
  Hint:  also great to get one of those Mexican lime squeezers (they have them all around now - Crate & Barrel, Williams Sonoma, etc.)
• 2 oz. vodka (can go up depending on the effect you want...can mask a good deal of vodka with this one)
• Dash Tobasco
• Dash Lee & Perins Worstershire Sauce
• Couple grinds of black pepper
• Fill up the rest with Clamato (regular).  The folks at Manny's do 1/2 Clamato & 1/2 regular tomato juice.
• Give it a stir & add your ice.  Very nice...
